Keystone Tree Crops Cooperative’s first product is hickory nut oil. The oil is produced from the nuts of the yellowbud hickory tree (Carya cordiformis), also known as bitternut, native to the Eastern United States.
Hickory nut oil has a flavor reminiscent of olive oil with buttery, nutty overtones. Nutritionally, it is similar to olive oil with its balanced blend of omega fatty acids, including oleic, linoleic, linolenic, palmitic, and stearic fatty acids. Hickory oil has a high smoke point, around 450°F, making it great as a high-heat cooking oil as well as a finishing oil for breads, salads, and the like.
